Chicken Tortellini Soup

I love soup! I could eat it all year long, which I do. This is my take on the classic chicken noodle soup, but instead of egg noodles I’ve added tortellini. My favorite!

The best part about this Chicken Tortellini Soup is that the ingredients are simple, it only takes about an hour to make, and of that hour your only doing about 20 minutes of actual work. What’s not to love about that!

Chicken Tortellini Soup

Ingredients
  

  • 1 lb Boneless Skinless Chicken Breast
  • 2 Medium Onions quartered
  • 1 Head of Celery chopped into 3/4″ chunks
  • 16 oz Carrots chopped into 1/2″ chunks
  • 1 pack Fresh Dill
  • 1 pack Fresh Parsley
  • 1 tbsp Minced Garlic
  • 3 x 32 oz Reduced Sodium Chicken Broth
  • 2 tbsp Olive Oil
  • 2 cubes Chicken Bouillon
  • 1 pack Frozen Cheese Tortellini

Instructions
 

  • Heat Oil in a large soup pot over medium heat.
  • Quarter Onions and add to the pot.
  • Chop Celery into 3/4″ chunks and add to the pot.
  • Chop Carrots into 1/2″ chunks and add to the pot.
  • Mix veggies and add Garlic. Let Saute for about 5 minutes.
  • Add Chicken Broth, Bouillon, Dill, Parsley, & Chicken to the pot. Bring to a boil. Once it reaches a boil leave on medium heat for 45 minutes.
  • Remove Chicken and shred. Put it back into the pot.
  • 15 minutes before serving, add the Tortellini to the soup and cook as the package says.
  • And you’re done. Enjoy with some crusty bread and butter!
