Chicken Tortellini Soup

Ingredients
  

  • 1 lb Boneless Skinless Chicken Breast
  • 2 Medium Onions quartered
  • 1 Head of Celery chopped into 3/4" chunks
  • 16 oz Carrots chopped into 1/2" chunks
  • 1 pack Fresh Dill
  • 1 pack Fresh Parsley
  • 1 tbsp Minced Garlic
  • 3 x 32 oz Reduced Sodium Chicken Broth
  • 2 tbsp Olive Oil
  • 2 cubes Chicken Bouillon
  • 1 pack Frozen Cheese Tortellini

Instructions
 

  • Heat Oil in a large soup pot over medium heat.
  • Quarter Onions and add to the pot.
  • Chop Celery into 3/4" chunks and add to the pot.
  • Chop Carrots into 1/2" chunks and add to the pot.
  • Mix veggies and add Garlic. Let Saute for about 5 minutes.
  • Add Chicken Broth, Bouillon, Dill, Parsley, & Chicken to the pot. Bring to a boil. Once it reaches a boil leave on medium heat for 45 minutes.
  • Remove Chicken and shred. Put it back into the pot.
  • 15 minutes before serving, add the Tortellini to the soup and cook as the package says.
  • And you're done. Enjoy with some crusty bread and butter!
