Heat Oil in a large soup pot over medium heat.
Quarter Onions and add to the pot.
Chop Celery into 3/4" chunks and add to the pot.
Chop Carrots into 1/2" chunks and add to the pot.
Mix veggies and add Garlic. Let Saute for about 5 minutes.
Add Chicken Broth, Bouillon, Dill, Parsley, & Chicken to the pot. Bring to a boil. Once it reaches a boil leave on medium heat for 45 minutes.
Remove Chicken and shred. Put it back into the pot.
15 minutes before serving, add the Tortellini to the soup and cook as the package says.
And you're done. Enjoy with some crusty bread and butter!
