Shrimp & Asparagus

Shrimp is my favorite. I could eat it every day. The flavors of the asparagus and tomatoes really shine through.
The best part of this recipe is that you can customize it with any veggies you’d like. I used frozen asparagus because that’s what I had. If you want to use fresh asparagus go for it. You can even swap the tomatoes out for mushrooms. Heck, you don’t even have to use asparagus and tomatoes. Have fun and make it your own!

Shrimp & Asparagus
Ingredients
- 1 lb Raw Shrimp Deveined & Peeled
- 2 bags Frozen Asparagus Unthawed
- 2 pints Grape Tomatoes Halved
- 2 tbsp Olive Oil
- 2 tbsp Garlic Chopped
- 1/2 cup Parmesan Cheese Shredded
- Salt & Pepper, to taste
Instructions
- In a large pan on low heat add the olive oil and garlic. Cook until garlic is golden.
- Add shrimp to pan and turn heat to medium-high and cook until they turn pink.
- Remove shrimp from pan.
- Add tomatoes to the pan. Cover and cook for 5 min.
- Add asparagus to the pan. Cover and cook for another 3-5 minutes and remove from heat
- You will notice that there is a lot of liquid in the pan from the veggies. Drain any excess liquid.
- Once the liquid has been drained add in the parmesan cheese, salt, and pepper and mix together.
- Serve over pasta or with a side salad.
