Shrimp & Asparagus

Ingredients
  

  • 1 lb Raw Shrimp Deveined & Peeled
  • 2 bags Frozen Asparagus Unthawed
  • 2 pints Grape Tomatoes Halved
  • 2 tbsp Olive Oil
  • 2 tbsp Garlic Chopped
  • 1/2 cup Parmesan Cheese Shredded
  • Salt & Pepper, to taste

Instructions
 

  • In a large pan on low heat add the olive oil and garlic. Cook until garlic is golden.
  • Add shrimp to pan and turn heat to medium-high and cook until they turn pink.
  • Remove shrimp from pan.
  • Add tomatoes to the pan. Cover and cook for 5 min.
  • Add asparagus to the pan. Cover and cook for another 3-5 minutes and remove from heat
  • You will notice that there is a lot of liquid in the pan from the veggies. Drain any excess liquid.
  • Once the liquid has been drained add in the parmesan cheese, salt, and pepper and mix together.
  • Serve over pasta or with a side salad.
