Lentil Soup

Lentil Soup is my all time favorite. It’s so hearty & comforting and simple to make. Most of the ingredients used are ones you probably already have on-hand.

What I like about this recipe is that it’s a great base recipe. You can add whatever other vegetables and grains you want like spinach, farro, mushrooms, peppers, kale, quinoa, and even squash. You name it, throw it in. It’s sure to be delicious.

Ingredients
  

  • 1 Small Onion diced
  • 2 Celery Stalks chopped
  • 3 Carrots chopped
  • 1 tbsp Minced Garlic
  • 2 tbsp Extra Virgin Olive Oil
  • 32 oz Vegetable Broth
  • 28 oz Crushed Tomatoes
  • 1 cup Lentils

Instructions
 

  • In a large soup pot on med-high heat add olive oil. Allow for it to get hot.
  • Add onion, celery, carrots, and garlic and mix. Cook for 10 minutes until onions are tender. Mix occasionally.
  • Add crushed tomatoes, vegetable broth, and lentils. Stir, cover, and bring to boil. You will want to stir every few minutes so the lentils don't stick to the bottom.
  • Remove cover and simmer on low heat until the lentils are tender. Again, stir occasionally so the lentils don't stick to the bottom.
  • Remove from heat & enjoy!
