Roasted Tomato Tortellini

Ingredients
  

Roasted Balsamic Garlic Tomatoes Ingredients

  • 1 pint Grape Tomatoes
  • 1/4 cup Balsamic Vinegar
  • 1 tbsp Chopped Garlic
  • Salt & Pepper to taste

Pasta Salad Ingredients

  • 1 bag Frozen Tortellini
  • 1/2 cup Kalamata Olives
  • 1/2 cup Shredded Parmesan
  • 1/4 tbsp Capers

Instructions
 

Make the Roasted Balsamic Garlic Tomatoes. You’ll want to give time to marinate these overnight.

  • In a small bowl add all ingredients and mix. Cover and store in refrigerator overnight.
  • Set the oven to 400 degrees Fahrenheit.
  • Prepare a baking sheet with parchment paper.
  • With a slotted spoon remove the tomatoes from the marinade and place the tomatoes on the baking sheet and spread out.
  • Place in the oven for 20 minutes. Let cool and remove from baking sheet.

Pasta Salad Instructions

  • Bring a pot of water to a boil and add frozen tortellini. Follow the instructions on the package.
  • While the tortellini is cooking add into a large mixing bowl the olives, capers, parmesan, and roasted tomatoes.
  • Once the tortellini is done strain them and run them under cold water to cool them off. Add them into the mixing bowl and mix the ingredients together.
