Garlic Parmesan Roasted Mushrooms & Asparagus

Asparagus and Mushrooms are two of my favorite vegetables. I add them to soups, one-pot meals, and salads. For this recipe, I simply coated them with Extra Virgin Olive Oil, Chopped Garlic, Salt & Pepper, and Parmesan. I then roasted them in the oven.
Try seasoning them with:
- Lemon Pepper
- Italian Seasoning
- Garlic & Red Pepper Flakes

Garlic Parmesan Roasted Mushrooms & Asparagus
Ingredients
- 1 Large Pack of White Button Mushrooms
- 1 lb Asparagus
- 1 cup Shredded Parmesan
- 1 tbsp Chopped Garlic
- 2 tbsp Extra Virgin Olive Oil
- Salt & Pepper to taste
Instructions
- Set oven to 375º F.
- Prepare a large baking sheet with parchment paper.
- In a large bowl add cleaned Mushrooms and Asparagus. In the same bowl add Extra Virgin Olive Oil, Chopped Garlic, and Salt & Pepper to taste.
- Place the Mushrooms and Asparagus on the parchment lined baking sheet. Sprinkle as much or as little Shredded Parmesan Cheese as you’d like.
- Pop in the oven for 25 – 30 minutes.
- Eat as a snack or serve as a side.
