French Onion Soup Chicken

French Onion Soup is absolutely delicious, but isn’t always filling. With this recipe, you get the taste of the soup with the protein from the chicken for a satisfying meal.

Ingredients
  

  • 3 Boneless Skinless Chicen Breasts Cubed
  • 4 Vidalia Onions Sliced
  • 1 cup Shredded Swiss Cheese
  • 2 tbsp Corn Starch
  • 3 tbsp Extra Virgin Olive Oil
  • 2 tsp Balsamic Vinegar
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1 tbsp Chopped Garlic
  • 2 cubes Beef Bouillion
  • 2 cups Water

Instructions
 

  • Preheat oven to 350º F.
  • Heat Extra Virgin Olive Oil in a large oven-safe skillet over medium-high heat.
  • Add onions and stir.
  • Cook onions for about 20 minutes until slightly caramelized, stirring occasionally to avoid burning.
  • Add Balsamic Vinegar and cook for 1 -2 minutes.
  • Remove onions from skillet and set aside.
  • Add Chicken, Chopped Garlic, Salt & Pepper to skillet. Cook chicken until all sides are brown and fully cooked.
  • Remove chicken from skillet and set aside.
  • Reduce heat to medium. Add 1 cup of Water and Beef Bouillion Cubes to the skillet. Let the Bouillion Cubes dissolve.
  • In another bowl add 1 cup of Water and Corn Starch. Stir together until Corn Starch dissolves. Add this to the skillet and stir.
  • This will begin to thicken and create a gravy. Once the gravy is thick remove from heat and add Onions and Chicken back into the skillet. Mix together.
  • Sprinkle Swiss Cheese on top and place into the oven for 10 minutes or until the cheese is melted and bubbly.
  • Serve with a fresh baguette or over whole wheat pasta.
