Southwest Chipotle Chicken Caesar Salad

Who doesn’t love a good Caesar Salad? This Southwest Chipotle Chicken Caesar Salad puts a whole new spin on the classic Caesar. The chipotle gives a mild heat while the corn and peppers balance it with their sweetness.

Southwest Chipotle Chicken Caesar Salad
Ingredients
Chicken Marinade
- 1 lb Boneless, Skinless Chicken Breast
- 1 pack McCormick Grill Mates Chipotle Pepper
Salad Ingredients
- 3 heads Romaine Lettuce chopped
- 1 Red Bell Pepper chopped
- 1 Avocado diced
- 1 Corn Cobb grilled
- 4 Naan Breads grilled
- 1/2 cup Canned Black Beans
Chipotle Caesar Dressing
- 1/2 cup Canola Oil
- 1 Chipotle Pepper in Adobo Sauce comes canned
- 2 tbsps Red Wine Vinegar
- 2 tbsps Worcestershire Sauce
- 1 tsp Dijon Mustard
- 2 Garlic Cloves
- 1/4 tsp Salt
Instructions
- Marinate the chicken. Follow the instructions on the back of the seasoning pack. Store in the refrigerator for up to 2 hours.
- While the chicken is marinating let’s make the dressing. In a small blender add the oil, chipotle pepper, red wine vinegar, Worcestershire sauce, dijon mustard, garlic, and salt. Blend until there are no chunks of garlic or pepper. Store in an airtight container in the refrigerator until you are ready to make the salad.
- Let’s chop up the lettuce and pepper. These can be prepped before the chicken is cooked and stored in the refrigerator until you’re ready to assemble the salad.
- It’s time to grill! Put the chicken and corn on the grill first and then add the naan on the grill for the last few minutes. We only want to warm the naan bread and create some nice grill marks. The corn only needs about 10 minutes on the grill. Once it starts turning gold pull it off and let it cool and cut the corn off the cob. The chicken is done once it reaches an internal temperature of 165º F.
- Now it’s time to assemble the salad! Take the dressing you’ve made and in a large mixing bowl pour it over the lettuce and mix. Dice up the chicken and avocado add that to the bowl. Add in the peppers, corn, and 1/2 cup of black beans and mix together.
- Serve with the grilled naan bread. Enjoy!
