Lemon Chia Seed Pudding

Chia Seed pudding is one of my favorite snacks, but this Lemon Chia Seed Pudding is so refreshing. You can have it for a snack, breakfast, or even dessert. Make it your own and add different toppings, enjoy!

Lemon Chia Seed Pudding

Servings 4 Servings

Ingredients
  

  • 1/2 cup Chia Seeds
  • 1 14 oz Can of Coconut Milk
  • 1/4 cup Maple Syrup
  • 1/2 tsp Vanilla Extract
  • Lemon Juice from 1 Lemon
  • Zest of 1 Lemon

Instructions
 

  • In a mixing bowl, add the coconut milk. You may notice that the coconut milk and coconut water have separated. That’s okay. Scoop out the coconut cream into the bowl and pour the coconut water into the bowl. Mix until well combined.
  • Add in the rest of the ingredients: Maple Syrup, Vanilla Extract, Lemon Juice, Lemon Zest, and Chia Seeds. Mix well. Cover and refrigerate overnight. When the pudding is done it will have the consistency of custard.
  • Spoon out into dishes. Eat plain or add unsweetened coconut flakes or freeze-dried blueberries.
  • The pudding can be kept in the refrigerator for up to 4 days.
